Observation: 1. Bags of open foods (lentils) stored directly on the floor in storage closet.
2. Sanitizer solution too strong (registered over 1000 ppm chlorine).
Corrective Action(s): 1. Do not store any food on the floor. All food must be covered.
2. Use only 1/2 tsp of 5% bleach per litre of water to make 100-200 ppm chlorine solution. Staff made a new solution at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Sanitation has improved however some areas missed:
***Some areas for cleaning have been missed: old waterfall area, storage shelves near cash register, the wall behind the two door cooler.
Corrective Action(s): Create a cleaning schedule for all equipment/walls/floors etc. Frequency of cleaning must be increased.

Routine Inspection
Walk-in cooler at 4 C or below.
Freezers are at -18 C or below.
High temperature dishwasher registered at 71 C on plate surface.
Hand sinks equipped with hot and cold running water, liquid soap and single-use paper towels.
Operator has purchased cooling wands to help cool hot liquids - good.
Pest control - contract in place with pest control company to address cockroaches. Traps have been placed everywhere and improvement seen. Continue working on this.
