205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: There is insufficient cool air circulation in the display cooler at the front of the kitchen to keep cold potentially hazardous food (PHF) items cold. The food items stored on the bottom measured at 4C while the ones stored on top shelves measured at 20C. The shelves were covered in foil and metal trays placed side by side which prevented cool air circulation inside the display cooler.
Corrective Action(s): Remove the foil on the shelves and leave gap between metal trays to allow proper air circulation inside the display cooler.

Observation: Significant build up of food debris and grease on large pots used for cooking.
Corrective Action(s): Remove the accumulation of food debris and grease on the equipment noted above. All clean pots and pans must be maintained free of grease, food debris and in sanitary condition.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: The large pans and pots that do not fit inside the two compartment sink are not being sanitized with chlorine solution. The operator stated that they are spraying the large pans and pots with bleach solution. There were no spray bottles available at the time of the inspection.
Corrective Action(s): You must demonstrate that you are properly sanitizing all equipment/utensils/food contact surfaces. Some options include:
1) Spray down the large pans/pots with bleach solution at min 100 ppm
2) Install a large enough sink that fits the largest equipment
3) Discontinue using large pans that cannot be properly sanitized.
Follow up with the health inspector.

Observation: There was no hand soap at the only handwashing station near the staff washroom. There is inadequate number of handwashing stations in the main kitchen.
Corrective Action(s): Install hand soap and paper towel dispenser at the two compartment sink. Use this sink as an additional handwashing stations for your staff. All staff must wash hands as often as possible during food preparation.

Observation: 1) There was cooked food item being cooled on wooden cutting board placed directly on the floor.
2) Multiple food items stored in the dry storage room/ inside the walk in cooler uncovered.
3) Handles of tongs touching the food items on trays.
Corrective Action(s): 1) Do not place any food item directly on the floor. It must always be placed or stored at least 6 inches off the floor.
2) Cover all food items with proper lids or plastic wraps.
3) Wash and sanitize the tongs. Handles must not touch the food items.

Observation: Significant build up of grease and food debris on the following areas:
- floors throughout the entire kitchen
- underneath grills
- on shelves in the dry storage room
Corrective Action(s): Clean the areas noted above.

Observation: Front display cooler is lacking working thermometer to monitor for temperature.
Corrective Action(s): Provide a working thermometer inside the display cooler.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: There was no FOODSAFE certified staff on duty.
Corrective Action(s): There must be at least one FOODSAFE certified staff on duty at all times. Either the manager who has FOODSAFE must be present at all times or register more staff to FOODSAFE training.

Comments

- General sanitation needs improvement.
- All other handwashing stations stocked with cold/hot running water, soap, and paper towels.
- All coolers (walk in, display) < or = to 4C.
- All freezers (upright, chest) < or = to -18C.
- Two compartment sink available for manual dishwashing. Please follow the proper manual dishwashing procedures. Do not skip the sanitizing step.
- Surface sanitizer available in bucket with presoaked wiping cloth at 100 ppm chlorine solution. Ensure to provide surface sanitizer at each station (ie. main kitchen, serving area in the front) at all times to clean and sanitize food contact surfaces.
- Dry storage area is satisfactory.
- No signs of pest activity at the of the inspection. Please submit the most recent pest control report to the health inspector.
