Front Retail Area
-Spanokopita/phyllo is held at room temperature -operator places for maximum of 4 hours (do not exceed otherwise discard)
NOTE: operator indicates lab tests for Aw/pH have been done regarding these items stored at room temperature -email me these lab tests to verify for extended storage at room temperature

General sanitation very good -no signs of pests indoors -Terminix Pest Control monitors regularly, no activity as per last report on October 20, 2023
Manual Wash method reviewed: wash-rinse-sanitize at >200ppm QUAT residual
QUAT Dispenser >200ppm as per test strips
NOTE: dispenser took almost 15 seconds before adequate concentration was met -should only take a few seconds for adequate mixing at the dispenser. Ensure all workers are aware of this when dispensing into the spray bottles

Good PPE worn: footy covers, hairnets, lab coats
Handsinks well stocked and clear for use
