203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): One container of cooked wonton at 62C was closed and left on the counter to cool. One pot of braised beef soup at 71.9C was covered and being cooled on the floor. Both items were cooked about half hour ago.
Corrective Action(s): Do not close the container lid fully when cooling food as the hot steam needs to escape in order to cool down properly. Operator adjusted the lids. Obtain an ice wand as your current one is broken, and stir the soup with the ice wand to cool down the food within 2 hours as discussed. This is especially important when you are cooling the initial soup stock.

Observation: An insert of raw spare ribs were stored on top of a box of jalepenos in the cooler. One container of spouts was open and stored in the metal fridge.
Corrective Action(s): Keep raw meats on the bottom of fridges and all food covered when not in use.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Food debris observed in the sandwich cooler shelves, top cover, on the floor under cooking line, on the wooden shelves and stand up glass fridge as well as domestic fridge in seating area. Heavy grease build up noted on the exhaust hood even though the last service was Sept 4, 2018. Operator says he cleans the exhaust filters every 2 months.
Corrective Action(s): You must properly clean and sanitize all areas mentioned above thoroughly so that food debris do not accumulate and attract pests. Use 100ppm bleach sanitizer as discussed.

***Owner's wife obtained Foodsafe on Aug 11, 2018 however the owner still needs to obtain Foodsafe since he is the primary cook while the wife is the server.
Note: braised beef soup main stock is batched made, portioned and frozen. Fresh meats are cooked using a bag of frozen beef soup as required and owner makes new batch of braised beef soup when they are low. Soup stock is not reused. Discussed using smaller portion so that food is not reheated more than one time.
