Corrective Action(s): Ensure food in hot holding unit are held at or above 60 C. Do not stack inserts into each other as the units are not designed to keep food hot in this way. Ensure enough water is in unit and a single insert is used.

Observation (CORRECTED DURING INSPECTION): No sanitizer noted on wiping cloths in kitchen. Sanitizer bucket under dishwashing sink noted at 200 ppm chlorine.
Corrective Action(s): Ensure wiping cloths are soaking in 100 -200 ppm chlorine solution. Wiping cloths must have detectable sanitizer on cloths to ensure wiped surfaces are properly sanitized.
