Observation (CORRECTED DURING INSPECTION): Repeat violation: Raw eggs are stored above tofu, noodles, vegetables inside the cooler. If raw eggs are cracked, egg may contaminate the ready to eat foods
Corrective Action(s): Ensure all raw eggs and raw proteins are stored below cooked meats and other ready to eat foods (e.g. vegetables) at all times. Operator moved raw eggs to a bottom shelf. Ready to eat foods moved to top shelf.

Follow-up inspection conducted:
- Low temperature dishwasher dispensed 50 ppm chlorine after final rinse cycle.
- Monitor and record the concentration of the dishwasher daily to ensure there is 50-100 ppm chlorine at the plate level.
- Dishwasher logs must be available on site for the district environmental health officer to review
- 1 section of the ventilation hood has been cleaned
- Food is stored at least 6 inches off the floor

Reminder: Record the temperatures for ALL fridges and freezers every day

- Another follow-up inspection may be conducted in the future to verify dishwasher and temperature logs are being used.
