Observation (CORRECTED DURING INSPECTION): Noted approx. 30 perishable buns were in the hot holding unit. The hot holding unit was @ 40oC and the buns were @ 35oC.
Corrective Action(s): The staff put the perishable buns in the hot holding unit before the unit is preheated to 60oC.
Ensure to preheat the hot holding unit over 60oC before putting in any perishable baked products.
The buns were discarded during inspection.
