Observation (CORRECTED DURING INSPECTION): Once again beef broth found to be at temperatures exceeding 4 degrees Celsius. Beef broth measured to be at internally probed temperatures of 8-10.2 degrees Celsius. CORRECTED DURING INSPECTION - Items discarded.

Corrective Action(s): Facility MUST obtain a stem/probe thermometer.
Facility MUST ensure beef broth is cooled 60-20 degrees in 2 hours and 20-4 degrees Celsius in 4 hours.
An ice bath (filling sink up with ice) and ice wand (purchased at restaurant supply store) has been discussed in the past.
Facility MUST have cooling practices in place IMMEDIATELY.
Health Inspector to return on MONDAY to check for Beef and Chicken broth temperatures.

ITEMS CORRECTED:
- Blender and items for bubble tea have been relocated. Hand sink no longer blocked and much space for food preparation.
- Sugar moved to dry storage

ITEMS TO BE CORRECTED:
- Some rat droppings remain on floor under drink area (between freezer and stand up cooler)
- Cooling method to be determined: Ice wand, smaller containers, ice bath, use of freezer, making fresh day of, etc.
