Observation: Raw wooden board used as backsplash above smoothie prep station in the back. Raw wooden board also used behind microwave.
Corrective Action(s): As noted on previous report, all surfaces must be non-absorbent, smooth, durable, and easily cleanable.
Operator to finish raw wood with sealant or paint.

Observation: Junction between previously removed wall and back coolers/freezers to be re-finished and sealed such that all surfaces are smooth, durable, nonabsorbent, and easily cleanable.
Corrective Action(s): Operator has been trying to source contractors for this project.

Comments

- Hand sink in the back area now properly supplied with liquid soap and paper towels. Designated dispensers still need to be obtained/installed.
- Prepped veggies cooler in front measured at 2C. Good.
- QUATS sanitizer spray bottles (at 200 ppm) available in the back area and in the front service area. Good.
- Deep cleaning in coolers, on floors, under hard-to-reach areas, and on walls/backsplashes has been completed. Please continue with deep cleaning at least once a week.
- Panini grills in the front (under domestic ventilation canopy) will now only be used for heating wraps. OK. Please also ensure the ventilation canopy is maintained in sanitary conditions.
- Fly strips no longer placed above food prep areas. A fly light has obtained and was in use at time of inspection. Fly activity appears to have decreased since last visit - please continue with pest control management efforts, such as deep cleaning regularly, keeping all food covered, keeping doors closed, and replacing traps when full.
- An updated floor plan drawing reflecting the current kitchen layout has been submitted.
