Observation (CORRECTED DURING INSPECTION): Quats sanitizer dispenser had no reading on test strip. Operator manually mixed Quats solution during inspection. Operator has test strips to ensure they can mix 200ppm solution.
Corrective Action(s): Quats dispenser to be repaired or replaced to ensure that it can dispense 200ppm Quats.
To be corrected by: As soon as possible.

Comments

Routine Inspection:
- Hot/cold water, liquid soap, and paper towel available at all hand wash stations
- High temperature dishwasher reached 71C or greater at plate surface
- All coolers were 4C or lower
- All freezers were -18C or lower
- Hot holding was 60C or greater
- Temperature logs maintained; Cleaning logs maintained
- Food storage was good; all foods were stored at least 6 inches off of the ground.

Multiple Serveries:
- Hand wash stations available with soap and paper towel
- All serveries contain domestic refrigerator/freezer that were 4C/-18C or lower
- 3 serveries contained dishwashers with long cycles; 1 is currently not in operation
- Temperatures for dishwashers are recorded. Operator stated that when dishwasher is not operational, the main kitchen dishwasher is used
