Observation: 1.Centre handsink and 2 comp dishwashing sink noted with white and black grim and mildew around the top edges and splash guards.
2. Inside ice machine noted splatter on side walls and on back green and black mildew.
Corrective Action(s): Ensure all sinks and food contact surfaces/containers are maintained in sanitary condition.

2. Turn off, drain, clean and sanitize inside and outside of ice machine.

Observation: No sanitizer prepared during inspection - chemical used is a cleaner on all food contact surfaces. 0 ppm chlorine / 0 ppm QUATS detected.
3.6 L jugs of bleach available on-site - used for sanitizing cloths at the end of day and used in 2 comp sink when dishwasher is broken.
Corrective Action(s): Ensure 100 ppm chlorine or 200 ppm QUATS is available to sanitize food contact surfaces. Current cleaner does not meet the sanitizing requirement for food contact surfaces. Review Sanitation Plan, have correct sanitizer chemicals and train staff.

Corrective Action(s): Ensure all sinks are supplied with hot & cold water, liquid soap and paper towel. Also all sinks must be easily accessible for use and not blocked by equipment, supplies or other items.

Observation: Standing white freezer noted at -2 C. Some food not frozen solid.
Freezer appears full and holds cardboard boxes and plastic wrapped items.
Outside unit read out noted at -21 C.
Corrective Action(s): Ensure freezer is capable of being maintained at or below -18 C.
Ensure adequate air flow is possible, re-organize freezer - large cardboard pieces and plastic can impede flow
All food must be frozen solid.

Observation: Back storage hallway noted with heavy clutter, materials under shelving unit and large access point in wall.
Corrective Action(s): 1.Ensure storage area is maintained as a clutter free area.
2. Keep all supplies off the ground to allow for pest monitoring and cleaning.
3. Seal access point/hole in left side of wall past shelving unit.
The above will help prevent pest harborage and pest entry into premise.

Observation: Janitor slop sink used to hold broken bottles and dishes, and garbage (used cardboard and plastic)
Corrective Action(s): Ensure slop sink is clear of everything other then a mop and or mop bucket. Sink is not intended to be used for storage of garbage or broken dishware.

1. Left display cooler: 8-9 C. Back cover off, water dripping under unit.
2. Right display cooler: 7-9 C
3. Dairy cooler: 7-9 C
4. Front cover of ice machine - missing. Lid has tape on right side.
Corrective Action(s): Ensure all equipment in premise is functioning properly.
1./2./3. Cooler must be capable of maintaining a temp of 4 C or less to hold potentially hazardous foods.
Cooler should not be dripping or missing covers.
4. Ice machine must be functioning properly and have all covers in place. Tape is not a permanent fix to damaged equipment. Covers allow for easy cleaning and protects vulnerable parts of the unit. Repair/replace parts.

Do not use any of the 3 coolers noted above for potentially hazardous foods until they are functioning properly.
