Minor soil/debris accumulation also noted on the pipes and surrounding area underneath the pre-wash counter. Corrective Action(s): *Thoroughly scrub/clean the affected surfaces, re-paint/finish the affected area on the wall, and re-caulk the joint between the pre-wash counter and the wall. *Thoroughly clean and sanitize the pipe and surrounding surfaces underneath the pre-wash counter in the dishwashing area. - Hand-washing basins are stocked with hot/cold water, soap, and single-use towels - Refrigeration temperatures are ≤4o Celsius with exception of the walk-in cooler (6 degrees C) *Minor ice build-up noted on the compressor inside the walk-in cooler. Manually de-ice or defrost the compressor and monitor temperature to ensure it maintains temps at/below 4 degrees Celsius. Operator indicates that a service call has already been made for the ice-buildup on the walk-in cooler. - Freezer temperatures are satisfactory - Hot-holding temperatures are ≥60o Celsius - Quaternary-ammonium food-contact surface sanitizer solution available at 200ppm concentration - High-temp dishwasher reached final rinse temperature of ≥71o Celsius (81.8 C) - No pest activity observed during inspection
