303 - Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation (CORRECTED DURING INSPECTION): Liquid soap was observed inside a spray bottle labelled as "sanitizer". It was mentioned that sometimes chlorine sanitizer is mixed into the same spray bottle. 0 ppm chlorine sanitizer was available inside this spray bottle.
Corrective Action(s): Do not mix soapy water into the 100 ppm chlorine sanitizer (bleach water) since soap can interfere with the effectiveness of chlorine sanitizer. Store soapy water in a separate spray bottle or container and label it properly. Store the chlorine sanitizer in a separate labelled spray bottle or container.

209 - Food not protected from contamination [s. 12(a)]
Observation: 1) Disposable single-use service utensils were being stored next to a plant (with soil in it) near the front service area.
2) Raw meat was uncovered in the walk-in-freezer and was not stored off the floor.
Corrective Action(s): 1) Service utensils were re-located to an area away from the plant. Make sure all food contact surfaces are stored in a manner to protect them from contamination.
2) Raw meat was covered by a staff member and stored off the floor during the inspection.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Buildup of food debris or grease was evident in the following areas:
-Floor in walk-in-freezer below shelving units
-Floor and lower surface of walls near the walk-in-freezer.
-Dry storage area (below shelving units).
-Dishwashing area
-Cooking area (floor between cooking equipment and sides of cooking equipment).
Corrective Action(s): Clean and sanitize the above-noted areas to remove buildup of food debris and/or grease; Correct by October 8, 2019 (within 2 weeks).

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation (CORRECTED DURING INSPECTION): A tray was being lined with newspaper and then paper towels. A garbage bag was being used to cover packaged meat products in the walk-in-freezer. Newspaper was observed on the floor inside the walk-in-freezer.
Corrective Action(s): Newspaper and garbage bag was discarded by Person in charge since they are not food grade, durable, non-aborbent, and are not easy to clean. Do not use garbage bags to cover food products since they may have odour-supressing chemicals and pesticides on them.

Observation: Faucet at the prep. sink in the kitchen were not present and had broken off according to the Person in Charge. Note: Hot and cold running water was accessible from a small metal component where the faucet was previously attached.
Corrective Action(s): Repair the faucet at the prep. sink; Correct by October 1, 2019.

Comments

Handsinks were supplied with liquid soap, hot and cold running water, and paper towels in the front area, kitchen, and three washrooms.

Previous dishwasher was replaced with a commerical high temperature under-the-counter dishwasher.
Dishwasher final rinse temperature was at 74.4 degrees C (71 degrees C or hotter) at the plate.
2-compartment sink was supplied with hot and cold running water.
100 ppm chlorine sanitizer was available in the other spray bottles.
No signs of recent pest activity were present at the time of inspection.
Ice machine was in a clean condition and the scoop was stored separately.

Walk-in-cooler, prep. cooler, under-the-counter cooler, and upright cooler were at or below 4 degrees C.
Walk-in-freezer was at or below -18 degrees C.
Hot-held food was at or above 60 degrees C.
