Observation (CORRECTED DURING INSPECTION): - Purple rice stored at room temperature without time stamps or time log.
- Five individual cakes stored at >17C inside the display cooler. Display cooler was not turned on.
- Large bucket of yogurt stored at >14C at room temperature.
Corrective Action(s): - Store all cold perishable food items at < or = 4C inside the cooler. Discard all the food items noted above.

Observation: Cooked custard left at 30C uncovered on top of the ice machine. Staff stated that custard is usually left at room temperature.
Corrective Action(s): Discard the food item noted above. Custard must be kept cold at 4C or hot at 60C. Cooling of custard must be done within 4hrs and must be time tracked.

Comments

- General sanitation is satisfactory.
- Main handwash station supplied with hot/cold running water, liquid hand soap, and single use paper towels from dispensers.
- Three compartment sink available. Sanitizer available at 100ppm chlorine bleach concentration. Staff unable to demonstrate proper warewashing method.
- Surface sanitizer available in spray bottle at 100ppm chlorine bleach concentration. The bin inside the sink only measured 50ppm chlorine bleach concentration. This concentration is too weak.
- Dry storage area has adequate space, shelves, cabinets.
- Valid Operating Permit posted in a conspicuous area.

Temperature control:
- All coolers < or = 4C.
- All freezers < or = -18C
- Rice cooker = 60C
- Working thermometers inside all coolers.
