Observation (CORRECTED DURING INSPECTION): Only bleach sanitizer solution for sanitizing food contact surfaces well over 200ppm in concentration.
Corrective Action(s): As discussed in previous inspections and as outlined in your sanitation plan a 100-200ppm bleach sanitizer solution is required for sanitizing food contact surfaces. Dilute 1 oz of regular unscented bleach to 1 gallon of water. Have this solution available for use at all times in the front service area and back food preparation area.

Observation (CORRECTED DURING INSPECTION): Staff washroom hand sink not provided with single use paper towels. Holder for paper towels missing.
Corrective Action(s): In the interim paper towels may be placed on counter. Ensure all hand sinks are provided with liquid soap and paper towels at all times.

Observation:
- Salad serving section at front service area not provided with a sneeze guard or partition.
- Observed staff place pot of boiled eggs on floor for cooling.
Corrective Action(s):
- In the interim place covers for the salad at the front service area. Install an adequate sneeze guard or partition to ensure food is protected from contamination. Correct by February 20, 2019.
- Do not store food products directly on the floor. This is an unsanitary practice. Correct immediately.
