209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1. Open bag of dry starch was not sealed between use in the dry storage room.

2. Three sticky fly glue strips (with dead flies caught on them) were hanging above the dishwashing area and near the prep. table.
Corrective Action(s): 1. Staff re-sealed the dry starch bag. Ensure all dry goods are kept covered between use to protect them from potential contamination.

2. Staff removed all three fly glue traps. If you would like to hang fly glue traps in the future, ensure they are not above ware-washing, food preparation, and food or food equipment storage areas.

304 - Premises not free of pests [s. 26(a)]
Observation: 1. Dead cockroaches were observed in two sticky glue traps below the double-door refrigeration unit in the dry storage room.

2. Dead flies were observed on three sticky glue traps.
Corrective Action(s): 1. Remove the above-noted glue traps with dead cockroaches on them and replace with new traps; Correct today. Staff informed they contacted the pest control technician today to have a service conducted soon. Pest control program is in place on a biweekly basis according to staff.

Provide a copy of your most recent pest control service report from this week to the district Environmental Health Officer by next week. Monitor for signs of recent pest activity and continue with pest control measures: pest control program, regular cleaning, sealing all potential entry points, and covering food to protect it from any potential contamination.

2. Glue traps with dead flies on them were removed by staff.

Observation: 1. Hole was observed in the baseboard in the dry storage room where dead cockroaches were present in two glueboards.

2. Buildup of grease was present in the cook line area (below and between equipment).
Corrective Action(s): 1. Seal the above-noted hole in the baseboard; Correct today. Ensure all entry points and harbourage areas are eliminated.

2. Thoroughly clean the areas between, around, and beneath the cook line equipment to remove the grease/debris accumulation; Correct by November 21, 2022. Ensure regular cleaning is done to prevent any potential breeding grounds for pests.

Observation: Cleaning is required behind and around equipment in the cook line, behind the chest freezer near the walk-in-cooler, and floor next to the laundry machine to remove accumulating food and grease debris.

Corrective Action(s): Ensure at least one staff member on duty at the food service establishment holds valid FOODSAFE Level 1 or equivalent course training in the absence of the Operator; Correct within 2 months. Failure to comply may result in progressive enforcement action (e.g. issuance of a violation ticket).

Handsinks were supplied with liquid soap, hot and cold running water, and single-use paper towels.
Walk-in-cooler and other refrigeration units were at or below 4 degrees C.
Freezers were at or below -18 degrees C.
Hot-held food was at or above 60 degrees C.
Dishwasher final rinse temperature was at or above 71 degrees C (measured at 73 degrees C) at the plate level.
100 ppm chorine sanitizer was available inside the sanitizer pails.
Apart from the potato starch, other food was covered in pest proof containers in the dry storage rooms.
Front entrance door and both back doors were observed closed between use.
