Observation (CORRECTED DURING INSPECTION): Box of packaged sushi rolls observed being stored on the floor in the walk-in cooler
Corrective Action(s): All foods must be stored at least 6 inches above the floor to protect against potential contamination from soil/debris. Addressed at time of inspection.

Observation: Food residues/debris and single-use packaging materials observed on the floor underneath shelving.
Corrective Action(s): Unsanitary conditions can attract pests/rodents. Thoroughly clean and maintain floors throughout the premises in a sanitary condition.

Observation: One of the 2 faucets in the deli (used for hand-washing) is not operational. Sensor is not functioning.

-Freezer temps satisfactory
-Hot-hold temps >/= 60 degrees Celsius
-Quats sanitizer available at 3-comp sink and in spray bottles (Kay Clicksan product).
*Please confirm correct concentration with the manufacturer. Current concentration at the wall dispenser is ~400ppm->may not be suitable for us on food contact surfaces at this concentration.
*Re-implement usage of the record sheets/logs for cleaning/maintenance of deli equipment, temp checks, etc.
