Observation (CORRECTED DURING INSPECTION): Small amount of food debris observed on deli slicer under sharpening guard and on spiked portion of sliding arm.
Corrective Action(s): Parts cleaned and sanitized at time of inspection. Ensure all equipment / utensils / food contact surfaces are thoroughly washed, rinsed, then sanitized.

Observation (CORRECTED DURING INSPECTION): No paper towels or liquid hand soap observed in the following areas:
1. Server station (2) hand sinks.
2. Bar (not in use at time of inspection).
Corrective Action(s): Soap and paper towels supplied at time of inspection. Ensure all hand washing stations are always supplied with hot and cold running water, liquid hand soap, and single use paper towels in order to facilitate proper hand washing.

Observation: Standing water in buckets observed under ice bins located at the two server stations. Debris / clutter observed in cabinets at server stations.
Corrective Action(s): Remove standing water as this is a potential pest attractant. Ensure all clutter / debris is removed as this may allow for potential harbourage areas for pests. Date to be corrected by: February 4, 2020.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: The following was observed:
1. 1-door glass cooler (front line refrigerator) measured 7 degrees C. Note: No food / beverage storage.
2. Light fixture located in staff locker room is not functional.
3. Paint appears to be peeling in multiple areas on ceiling (in kitchen near light fixtures).
Corrective Action(s): Ensure above-noted cooler is capable of maintaining food at 4 degrees C or less. Date to be corrected by: February 7, 2020.
Ensure adequate lighting is available in staff locker room area. February 7, 2020.
Ensure no paint is peeling on ceiling in kitchen area. Ensure affected areas are properly patched / repainted. Ensure all food and food contact surfaces are protected from potential contamination. February 19, 2020.

2. Multiple chemical spray bottles are unlabeled.
3. Two containers of loose powder observed behind server station white mini cooler.
Corrective Action(s): Ensure all chemical spray bottles are labeled to identify contents to prevent accidental mixing and/or misuse. Date to be corrected by: February 7, 2020.
Ensure no bait (including loose powder) is used within the food premises. Bait may potentially be transferred to food / food contact surfaces. Date to be corrected by: February 4, 2020.

Preparation cooler (front line cold table) at 4 degrees C. No food storage at time of inspection.
Bar walk-in cooler at 3 degrees C. No potentially hazardous foods at time of inspection.
Bar and service area coolers at 4 degrees C or less.
Walk-in freezer at -20 degrees C.
Hot holding internal temperatures at 60 degrees C or more.
Food items are generally covered and well organized.
Dry storage bulk food items stored in containers or bins with lids/covers.
An electronic temperature logging system is in place for all kitchen cold holding units
Probe thermometers available on site.
Non-latex gloves available.
Commercial dishwasher measured 71 degrees C at utensil surface and 100 ppm chlorine in rinse residual.
Quaternary ammonium compounds (quats) sanitizer measured at 200 ppm in spray bottles.
Premises serviced by a licensed pest control operator. Recent pest control reports reviewed at time of inspection. Pest activity noted in exterior and crawl space (no food / equipment storage); no other interior pest activity noted on reports. Reminder to follow pest control operator recommendations.
