Observation: Some flies observed in the main kitchen area. A pest control company is in use and fly trap measures are in place. Contamination of food by flies not observed at the time of inspection.
Corrective Action(s): Ensure to monitor for fly activity and reduce/eliminate presence of flies to prevent contamination of food. If needed, notify pest control company to implement additional measures when necessary.

Observation: Plastic light cover above dish washer unit is missing. Replacement is required to prevent shattering of light tubs over kitchen area.

2-compartment sink in use. Quat sanitizer in use at 200 ppm in sani buckets.

Dishwasher final rinse at 25 ppm to 50 ppm chlorine at 58C at the plate. The concentration of chlorine sanitizer at the plate fluctuates.
Note: this unit require servicing to ensure sanitizer concentration is constant and always available.
