Maintenance person stated that they had cleaned the cooler and it had returned to at or below 4 degrees C.

Note: Person in charge wrote out written food safety and cleaning procedures for the Quickcake pancake machine that was present onsite at the time of inspection.
It was discussed that time-tracking and record keeping must be conducted for the rehydrated mix (packaged pancake mix and water only and no raw eggs). The rehydrated mix can only be placed between 4 to 60 degrees C for 4 hours maximum after it must be discarded. If the time tracking is not conducted and recorded as per the food safety plan, then health approval to use the self-serve pancake self-contained machine will not be granted.
