Observation (CORRECTED DURING INSPECTION): Food contact surface sanitizer not avilable at the time of this inspection. Operator made bleach water solution as sanitizer with 100 ppm chlorine residue and provided. Ensure surface sanitizer made fresh everyday. ERnsure to keep wiping cloths in the sanitizer solution.

Observation: High Temperature dish washer lacks detergent and rinse aid. Dishes and cutleries are not properly washed during wash cycle.
Corrective Action(s): Provide proper detergent and rinse aid for the dishwasher so that dishes and utensils are wahsed properly.
Utilize 3 comp sink method to wash, rinse and sanitize dishes.

Routine inspection:

- Hand washing stations supplied with hot/cold running water, liquid soap and paper towels in dispensers. All hand washing stations are to be fully supplied in operating hours.
- All coolers measured at or below 4 degree C. All freezer measured at or below -18 degree C.
- Buffet hot holdings measured at or above 60 degree C. Buffet cold holding measured at 5 degree C at lunch hour.
- Prawns observed thawing under running water.

General sanitation
- Floor noted clean. Ensure to clean under equipment and hard to reach areas.
- Customer washroom maintained.
- Dish washer registered at 75 C. Detergent available but rinse aid jug noted empty. Detergent and rinse aid are to be refreshed.
- No obvious sign of pest activity observed at this date.
