Observation: 1. Fly sticky glue traps with flies on them were observed hanging over the slicers above the preparation area.
2. Light covers were missing from a ceiling light near the slicer and a light bulb in a walk-in-cooler.
Corrective Action(s): 1. Remove the fly glue traps and ensure new fly traps used for the next summer are placed in areas that are not above food preparation/equipment storage areas; Correct today.
2. Replace the light covers for both the ceiling light in the front area and in the walk-in-cooler; Correct within 2 months time.

Comments

Handsinks were supplied with liquid soap, hot and cold running water, and paper towels.
The operator was washing their hands between handling money and food.
Refrigeration units were 4 degrees C (40 degrees F) or colder.
200 ppm chlorine was available in the bucket with wiping cloths and in the spray bottle.
The meat slicer was rinsed and sanitized with bleach water at the time of inspection. The operator mentioned that they would fully disassemble it, soak it in detergent and then sanitize it later today.
No signs of recent rodent activity were observed.
