Observation: Trays of cooked chicken and beef 37 - 60 C, stored partially on grill. Grill surface space is too small to allow for cooking of additional meats and hot holding previously cooked foods.
Correction: After cooking transfer meats to oven to hot hold at 60 C or hotter.
Comments

Chicken cooked on grill as needed then relocated to front counter food warmers. Hot holding of chicken at front not observed as product has temporarily sold out.

Back door kept closed to help exclude pest entry.

Ventilation hood has been professionally cleaned and certified.

Required premise cleaning completed.
