Observation (CORRECTED DURING INSPECTION): 1) Sanitizing sink solution was tested to have 50 ppm chlorine residual.
2) Food-contact surface sanitizer was not readily available for use.
Corrective Action(s): 1) 100 ppm - 200 ppm chlorine residual is required for sanitizing dishes and food contact surfaces. Operator added more chlorine-based sanitizer to the sink at time of inspection. 100 ppm chlorine detected.
2) Operator prepared a chlorine sanitizer solution at time of inspection. 100 ppm chlorine residual detected.
Ensure sanitizer solution is available for use during all hours of operation, either in the red sanitizer pail or in a spray bottle.

Comments

- Hand sink properly supplied with hot and cold running water, liquid soap, and paper towels.
- Three-compartment sink maintained in sanitary condition, sink plugs available. Sinks were set up for manual warewashing, however sanitizing sink solution was not strong enough (see violation code 302 above).
- All coolers measured at 4C or colder
- Freezers measured at -18C or colder
- Accurate thermometers available. Temperature records well-maintained and up to date.
- Dipper wells for ice cream scoops were in use and were working properly - good.
- General sanitation satisfactory. Ice machine maintained in sanitary condition.
- No signs of pest activity noted at time of inspection.
- Staff onsite had valid FoodSafe level 1 certificate.
