Observation:
Handwashing sink in the walk-in-processing cooler (nearest the packaging area) has no running hot and cold water exiting the tap. Staff are unable to wash their hands after handling raw proteins.
Corrective Action(s):
Fix the tap so running hot and cold water exits the tap at all times.

Comments

A routine inspection was completed:
- Seafood walk-in-cooler -3C; meat walk-in-processing cooler 4C; thermometers present; and temps electronically monitored.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in spray bottles and 3-comp sink had strength of 200ppm. Test strips present.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups; and foods stored 6" off the floor on shelves, racks or pallets.
- Raw meats stored in separate groups (poultry, beef, pork, etc.)
- Designated area where the Deli Dept. stores and processes whole chickens for cooking. It is clean and organized.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good.
- No signs of pests.
- All surfaces and equipment are in good working order.
- Ice making machine and area is clean.

ACTION
The handwashing sink in the walk-in-processing cooler (nearest to Meat Dept packaging area) has no running hot & cold water exiting it. Fix the tap, so running hot and cold water exits the tap at all times.
The floors in the Meat & Seafood Dept are dirty and stained. A thorough scrubbing & cleaning of the floors in needed.
