Observation: During time of inspection, observed tomato sauce (used for cabbage rolls) and fried onions with bacon being left on gas grill at room temperature
- Operator informed that he will stop this practice
- Moved items to colder cooler during time of inspection
Corrective Action(s): - Potentially hazardous foods should not be kept at room temperature even if they are being heat treated again (microwaved), potentially hazardous foods left at room temperature for more than 2 hours will encourage pathogenic growth and formation of toxins
- Ensure to keep foods either at 4'C or colder at all times OR at 60'C or hotter at all times

Observation: During time of inspection, handwashing station of 3 compartment sink was blocked off, no access to sink, liquid soap or paper towels
Corrective Action(s): - Operator informed that he will remove partition between sinks so there is more access to compartments and he will move liquid soap dispenser over
- Ensure that the kitchen has a handwashing sink that is accessible, with hot/cold running water, liquid soap and paper towels

Observation: During time of inspection observed:
- facility to be cluttered
- some mouse droppings underneath shelving of perogi dough rollers
Corrective Action(s): - Ensure thorough de-cluttering is done throughout facility, remove any items no longer used
- Clean out area underneath shelving, sweep and disinfect these areas, continue to monitor for rodent activity

Observation: During time of inspection, QUAT dispenser observed to be leaking when used to dispense QUAT
Corrective Action(s): - Dispenser should not be leaking when being used
- Ensure that this is serviced and repaired

- All temperatures meet health requirements:
* Coolers at 4'C or below
* Freezers at -18'C
- QUAT sanitizer solution in kitchen at 200ppm, ensure to use properly labeled bottles
- Low temperature dishwasher available, final rinse of chlorine sanitizer at 50 ppm
- Test strips available
- Abell pest control still employed with facility, 4 mechanical traps checked during time of inspection, no rodent activity detected
- General sanitation of facility - OK

Note:
Spoke with operator regarding labelling of perogi's for sale
Operator informed that he is no longer distributing wholesale
Gave operator CFIA handout on labelling
