Routine inspection Kitchen: - Hand washing station maintained. - Kitchen noted clean and in good repair. Equipment observed in good condition. - Fridges measure at or < 4 degree C. Freezers measured at or < -18 degree C. Temperature monitoring log is to be kept updated. - Dishwasher registered at 71 degree C after several wash cycle. Please ensure temperature of rinse cycle reaches at least to 71 degree C. Keep records of daily monitoring. - Cutting boards in good working condition. - Bleach water solution of 100-200 ppm chlorine available. Ensure 48 hours refreshing cycle for this sanitizer. Also, this applies to spray bottles on outdoor tables.
