- Rice scoop is stored in ice water between uses.
- Temperature monitoring records are maintained; however, there are no dates on records therefore unable to verify when record was taken. **Date temperature monitoring records.
- Food storage practices appear satisfactory. Storage is organized, food is protected from contamination.
- Interior of ice machine appears maintained in a sanitary condition.
- 200 ppm QUATS available for sanitizing food contact surfaces.
- QUATS test strips available for verifying sanitizer concentration. **Verify sanitizer concentration from QUATS dispenser daily. 200 ppm - 400 ppm required.
- High Temperature Sanitizing Dishwasher: 75.4C at dish surface. Minimum Wash and Rinse temperatures achieved per unit data plate. Wash: 74C; Rinse: 87C
- General sanitation of premises appears satisfactory.
- No signs of pest activity noted at time of inspection.

**Install doorsweeps at restaurant back door and storage room door to prevent potential pest entry.
