-Discussed issues with the food safety procedures
-Temperature logs and batch records are not maintained, but these need to be developed and maintained
-Discussed email resources that were sent yesterday and operator will have it translated to him by a family member
-Food processing at this facility is complex and maintaining proper monitoring records allows traceability to ensure food safety requirements are met
-Recipe formulation was demonstrated to be different than submitted procedures, which further adds to the need for maintaining monitoring documents to ensure food safety requirements are met. January 3, 2024 batch of sausages have a different formula and the sausages in the display coolers are from a different day and the food premises has demonstrated a difference in recipe from batch to batch. This means the products in the display cooler may have different recipe formulations and it would be difficult to trace back which sausages were safe to eat or not.
