- Hand washing station is equipped with liquid soap and paper towels. Hot and cold running water is available.
- Quats Sanitizer is at 200 ppm concentration in the three compartment sink
- Dishwasher final rinse temperature above 72 degree Celsius at the dish level.
- Coolers are at 4 c or below and equipped with thermometers.
- Chest and walk in Freezer ambient air temperature below -18 c. Reminder: Cover all food product prior to storing in the freezer.
- Temperature logs are in place
- Pest control in place
- General sanitation satisfactory at the time of inspection.
