Observation (CORRECTED DURING INSPECTION): Fish batter and fillets observed between 11 and 14 C. Unit and other products at or less than 4 C.
Corrective Action(s): Discussed with staff. Thaw fish under COLD running water only or in sealed bags left in cold water reservoir and changed regularly. If fish product intended for immediate placement in prep cooler ensure product stays below 4 C. Recommend use of a second step by storing thawed fillet in walk-in cooler prior to placement in prep cooler. Reduce volumes of fish in prep cooler and get batter on ice bath in prep cooler.

Comments

Drain flies observed in the kitchen. Discussed with manager. Cleaning identified areas around sinks, grease traps and drains will help control. Discuss with Ecolab. The continued improvement to cleaning to combat food sources for pests will help with issue. Ask about foam pump applicator to help deal with source control of drain fly breeding, and facilitate easier and more effective cleaning in hard-to-reach areas.

Temperature controls ok.

Ensure sanitizer buckets used in kitchen have enough solution to submerge cloths and that they are changed every couple of hours.
