Observation (CORRECTED DURING INSPECTION): Dishwasher first 3 runs - chlorine sanitizer concentration on utensils was at 10 -25ppm.
Corrective Action(s): Dishwasher is to provide a final sanitizing rinse of 50ppm for every run. After 4 runs, about 50ppm detected on the dishes after the final rinse. Provide test strips to verify that the dishwasher is working properly. As part of your sanitation plan, keep daily records for this.

Routine check.
Coolers (display, bar cooler, large 2 door, 2 domestic coolers) - temperatures at 4C/ 40F - good.
No hot holding during inspection.
**Keep daily temperature records.
Ingredient information - food in freezer - most is labelled with ingredients. Be aware of accurate ingredient information.
Baked goods at front are covered.
Sandwiches are date labelled.
Staff on site with FoodSafe level 1 (or equivalent) - one states they have a valid Food Safe certificate.
Note that FoodSafe level 1 certificates expire after 5 years and can be renewed before they expire by taking a Refresher course - www.foodsafe.ca Refresher.
Hand washing sink in kitchen has hot/cold water, liquid soap, and paper towels in dispenser - good.
Chlorine bleach used for sanitizing counters and food contact surfaces (bucket emptied during inspection (close to closing). Use 1 tsp bleach in 1 liter of water.
Commercial dishwasher wash water 120F - good. Sanitizer - see above.
Cleaning - general cleaning and floor cleaning is good.
Monitoring traps for pests - 3 checked - empty. Clean under turbo oven as discussed. Pest control program appears to be in place.
