A routine inspection was completed:
- Fridges below 4C; freezers below -18C; and thermometers missing.
- High temperature dishwasher had temperature of 72.5C during the rinse cycle, as per max/min thermometers.
- Quats sanitizer used and had a strength of 200ppm.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- General sanitation level is good.
- No signs of pests.
- All surfaces are in good working order.
- No foods present. Food only purchased or brought in when there is a booking or event.

ACTION
Contact a professional company to cleaning the exhaust canopy and filters. This shall be done on a regular schedule to remove grease in the vents.
Expired FoodSafe certified staff. Have staff retake the FoodSafe Level 1 course and have a copy of the valid certificate on-site.
Purchase and place a thermometer in each fridge and freezer compartment, so temperatures can be monitored.
