Observation: Rodent droppings found in the basement on the floor under the metal racks storing cleaning chemicals. Droppings carry pathogens.
Corrective Action(s): Immediately clean up the droppings and wash & sanitize all surfaces that came into contact with the droppings. Ensure staff are cleaning under these metal racks DAILY to remove any droppings. This will help determine how active and the size of the problem.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -16C or colder; hot holding units above 60C; and thermometers present.
- Low temp dishwasher had [Cl2] of 100ppm. Glasswasher had [Cl2] of 100ppm.
- Quats sanitizer is spray bottles and utensil soaking buckets had strength of 200ppm. Ensure utensils are rinsed with water after being removed from the Quats sanitizer soak, to remove any residual sanitizer.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins separate from RTE foods; and all foods stored 6" off the floor on racks or shelves.
- No expired food for use or for sale. FIFO rules being followed.
- General sanitation level is good and has been maintained since the previous inspection. Improvement in sanitation and de-cluttering found in the basement. Great job.
- Professional pest company services and monitors the premises on a regular basis. Mechanical traps (fly lights, snap traps, fly paper, etc.) being used to monitor and eliminate pests.
- Valid FoodSafe certified staff present.
- Front bar area is clean and organized. No concerns with pests.
- The upstairs walk-in-cooler floor, storing kegs, is scheduled to be replaced this year, once construction is completed on neighboring building.

ACTION
1) Start storing all wiping cloths in a bucket of sanitizer when not in use. Change the sanitizer solution every 2-3 hours with new sanitizer solution to keep it at 200ppm strength.

2) The kitchen floor is peeling up and there are some holes in it due to age and wear & tear. Please save money and plan to replace the floor in the future.****
