- Temperature Control: No concerns noted this date. Temperature monitoring is required to be conducted on site. (ie: refrigeration/hot holding, etc)
- Manual Dishwashing: Quat based sanitizer
- Ensure all food contact surfaces are cleaned and sanitized after use or on a timely manner.
- Wiping cloth storage: Refer to Violation Notes.
- Use 200ppm Quats solution and make as per manufacturer's instructions. Change sanitizing solutions in sinks and buckets every couple of hours. Change sanitizing solutions in bottles daily. Use test strips to measure the concentration of sanitizer.
- Food Storage: Ok. First In - First Out discussed. Monitor expiration dates/Best before dates.
- Sanitary Facilities: Ok.
- Chemical Storage: Ok.
- Staff Hygiene: Discussed. (ie: Handwashing prior to glove use)
- Sanitation: Ok.

- Pest Control: Monitoring is required to be conducted.
- Garbage, Recycling and Composting Disposal: All items are to be stored in covered, rodent proof containers.
