Observation (CORRECTED DURING INSPECTION): No paper towel in dispenser at handwashing sink at pizza prep area. Lone staff indicated paper towel has just been emptied. No paper towel near handwashing station observed.
Corrective Action(s): Handwashing stations must be stocked with hot/cold running water, liquid handsoap and paper towel at ALL times. Liquid handsoap and paper towel must be replenished immediately if dispenser is empty.
Staff replenished paper towel at time of visit.

Comments

The following items have been observed:
-->Quats sanitizer in spray bottle is present at pizza prep area.
-->Handwashing station at pizza prep area is clear of item and accessible.
-->Milk and cream cooler is now measured at 3.8oC.
-->Toquitos are measured at 68oC to 78oC.
-->It is indicated in-use utensils are washed and sanitized every 4 hours.

Note:
It appears that one staff on duty is not adequate to ensure food safety practices can be performed properly. Lone staff is unable to refill paper towel in dispenser due to amount of customers going in and out of this facility.
