Routine inspection

General sanitation:
Floor noted clean and free of build ups and food debris. Walls back splashes and equipment door handles, facing observed clean and maintained.
No sign of pest activity noted at this date. Pest management plan implemented. Mice traps noted around kitchen under sinks and equipment. Pest proof containers utilized for flour, sugar etc. Food noted stored above the floor in sanitary condition.
Dry storage observed clean and maintained. Food stored on shelve and above floor. Lighting noted adequate in storage area.
Wiping cloths separation observed. Cloths washed and sanitized on site in laundry room. Laundry detergent available. To properly disinfect wiping cloth, High heat setting in dryer is to be used .
Janitorial room noted organized. Mop sink maintained. Chemicals stored properly.

Kitchen:
**Hand washing sink fully supplied.
Important Reminder: Hand washing station is to be free of obstruction at all time so that staff can wash hands properly before handling food.

**All coolers measured at or below 40F(4C). Walk in cooler noted clean and food labeled and covered. Freezers measured at or below 0F (-18C).
Important Note: Walk in freezer is to be maintained. Frost accumulation discussed. Do not overload freezer with boxes. Cleaning and sanitizing door seal and rubber in this unit discussed.

Food in hot holding unit measured at or above 60 degree C( 140F).
Noted ground meat thawing in a clean container under running water then transferred to cooler at the time of inspection.
High temp dishwasher registered at 73 degree C at the dish surface
Grill and fryers exhaust noted clean and maintained and recently inspected.
Prep 2- comp sink maintained. Dish pit 2- comp sink maintained. Chemicals available and dispensers in good working order.
QUAT sanitizer 200-400 ppm available in properly spray bottles.

Dining room:
Ice maker kept clean and ice scoop stored properly in a clean container.
Freezer measured at -18C or colder.
No sign of pest noted.
QUAT sanitizer available.
Garbage managed and sorted in sanitary manner.

Back room/ storage:
Cutlery sorted and kept in clean containers.
No sign of pest activity at this date.

There is a mini bar in rec room equipped with hand washing station and beverage cooler. No perishable food stored in this mini bar.

Staff are food safe trained. Ensure to check expiry dates on food certificates and renew if needed.
