Observation (CORRECTED DURING INSPECTION): 1. Observed variety of pastries (chicken, ham and cheese, cheese) in the front display case. the display case not a refrigerated unit. Over 2 hours at room temperature
2. Observed 2 raw eggs in the baking section left out at room temperature over 2 hours
Corrective Action(s): 1. Discarded in total of 12 pastries during inspection. Do not place any perishable food items including proteins and dairy in the display case as the unit is not refrigerated. Use the front display coolers instead.
2. Raw eggs are considered perishable and requires refrigeration during storage at all times. Perishable food items can be left out at room temperature for 2 hours or less and must be discarded after 2 hours have passed. Do not put back into a refrigerator once 2 hours have passed. Discarded during inspection.

Observation (CORRECTED DURING INSPECTION): No bleach water was available to sanitizer food contact surfaces. Mr.Clean was in use in the kitchen.
Corrective Action(s): Do not use Mr. Clean product in the food prep areas as this is not an approved sanitizer to use in the kitchen. Prepare 100ppm bleach water solution to sanitize food contact surfaces. Mix 1L of bleach with 5-10ml of household bleach to make ~100ppm Cl bleach water soultion. Provide a sanitizer container by the espresso machine to store used wiping cloths. Change the sanitizer regularly as the solution gets mulky.
