Observation (CORRECTED DURING INSPECTION): Undercounter cooler at cashier area measured to be at 11.2-12.6 C; cold potentially hazardous foods such as juice and milk was stored in it. Operator already called for service the cooler.
Corrective Action(s): Required operator to remove all potentially hazardous items out of the cooler and stored in a working cooler.

Observation (CORRECTED DURING INSPECTION): Observed a knife at one prep cooler being stored in between the cooler and the prep table where it is difficult to clean and sanitize.
Corrective Action(s): Required operator to remove knife, clean and sanitize. Ensured to have a clean knife holder/container for proper storage of utensils. All utensils must be cleaned and sanitized every 4 hours when in continuous use. Ensure to use separate utensils for different types of food.

Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher ran out of sanitizer so that after final rinse cycle; residual chlorine was at 0 ppm; one extra bottle was on site and when replaced, 50 ppm of residual chlorine was detected.
Corrective Action(s): Required operator to replace the empty bottle and order for more stock.
