General sanitation is good. Sanitizer in labelled spray bottle is at the appropriate concentration. Test strips are available. Temperature of refrigeration units are satisfactory. Probe thermometers are available. Please ensure that they are calibrated. Soups were being reheated in the soup kettle. A reminder to reheat soup to 165F/74C and keep hot at 140F/60C. Temperature of the sanitizing cycle reached the correct level.
