-Follow-up inspection to student inspection conducted on September 09, 2020.
-Cooked chicken and cooked beef were at 4C. Chicken and beef cooled rapidly in the chest freezer, prior to placing in cooler.
-Equipment was found to be clean and well maintained. Mandolin is properly disassembled for cleaning and sanitizing at the end of the night.
-General food storage practices good at the time of inspection. Raw meats were stored below ready-to-eat foods. Sashimi is considered a ready-to-eat food and can be stored on the top shelf in the cooler.
-Single use containers have been discarded.
-Cutting board has been replaced.
-Please contact the inspector if you have any questions or concerns.
