Observation (CORRECTED DURING INSPECTION): Bleach sanitizer was too strong and resulted in bleaching out a test paper (>200 ppm). Sanitizer was diluted down to 100 ppm chlorine at this time.

Observation: Observed live and dead cockroaches caught on sticky traps. Weekly pest control service is in place.
Corrective Action(s): Continue to work with your pest control contractor. Adhere to their recommendations to control cockroach population. Improve sanitation, remove harboring sites and block any entry ways.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: 1. Small pool of water observed underneath the front hand washing station.
2. Flattened cardboard boxes stored throughout the facility.
3. Small openings observed on the wall located under the 2 compartment sink.
4. Heavy grease and tempura batter build-up on the side of deep fryer and on the floor.
5. Heavy clutter noted by the chest freezer (e.g., empty containers, flattened cardboard boxes, etc.)
Corrective Action(s): 1. Clean and sanitize area under the front hand washing station. If this pool of water was caused by leaking plumbing, service the plumbing. Correct this by: March 17, 2022
2. Remove all the flattened cardboard boxes on site as it may act as harbouring site for cockroaches. Correct this by: March 17, 2022
3. Block any holes and crevices on the wall to discourage pest entrance. Correct this by: March 31, 2022
4. Clean and sanitize grease and tempura batter build-up. Correct this by: March 24, 2022
5. Remove clutter in the back by the chest freezer to better monitor pest activity. Correct this by: April 17, 2022

Routine inspection conducted:
Hand washing stations were fully equipped with hot and cold running water, liquid soap and paper towels.
All coolers measured at or below 4C.
All freezers measured at or below -18C.
Hot holding (rice and miso soup) measured at 60C or higher.
2 compartment sink in use for manual dishwashing.
Kitchen hood cleaning past due on December 29, 2021. The surface of ventilation hood appears to be in sanitary condition. Contact a contractor to professionally clean the kitchen ventilation hood.

Note: Newspaper is not to be used as a lining material close to a deep fryer. Potential fire hazard. Newspaper removed at this time.
