Pizzas are on display so that customers can choose which type they want upon ordering. When ordered, pizzas are cooked. Options discussed with manager. Manager to decide which option (one or the other) is most feasible. Food Safety Plan must be updated to reflect new process.

1. Pizzas kept on display for the entire day are for display only and are discarded at the end of day. Extra pizzas are stored in coolers and brought out to be cooked when ordered.

2. Pizzas on display are time-tracked. 2 hours maximum on display and MUST be discarded after 2 hours. Timers and tracking records required to verify that this process is in place.

Observation: - Food handlers are unable to use single compartment kitchen prep sink for food preparation purposes.

**In the meantime, there are additional prep sinks in other areas of the kitchen that could be used. However, locations are not ideal as areas are also in use for other food preparation purposes.

- Single Door Upright Freezer: -16C (food products are maintained in a frozen state).

- Daily temperature monitoring records are maintained. *Ensure that corrective actions are taken if incorrect temperatures are noted.
- Sushi Rice (Poke Station) stored at ambient temperature: pH 4.5 (pH test paper)
- Poke Station and Culinary Station - toppings stored in metal inserts submerged in ice. Minimal quantity noted.
- Food storage practices appear satisfactory - storage is organized, food is protected from contamination.
- Wiping cloths stored in 200 ppm QUATS at all stations and throughout food preparation areas in main kitchen.
- QUATS test strips available to verify sanitizer concentration.
- High Temperature Sanitizing Dishwasher: 81C at dish surface (min/ max thermometer). Temperature gauges indicate that minimum wash and final rinse temperatures achieved.
- Dishwasher temperature monitoring log maintained. Min/ max thermometer used to monitor temperature.
- Interior of ice machines appear maintained in a sanitary manner. Ice scoops stored in clean container outside ice machine.
- General sanitation of premises appears satisfactory (unless otherwise mentioned).
- No signs of pest activity noted at time of inspection. Regular pest control services provided by a pest control company. Follow all recommendations provided by your pest control service technician.
- FOODSAFE requirements are in compliance.
- Permit to Operate posted.

**The Diamond Alumni Centre (DAC) is currently undergoing renovations. At this time, completion date for DAC renovations are unknown. DAC Catering is still operating by sharing the facilities (cooking, dishwashing, cold and dry storage, warming/ hot holding) at Mackenzie Cafe. Separate catering storage area is located adjacent to Mackenzie Cafe. No food preparation or plating at catering storage area. Cooler storage at catering storage area: ≤4C
