Observation (CORRECTED DURING INSPECTION): Rotten onions were found mixed within the bulk of onions in a plastic container.
Corrective Action(s): Staff discarded the rotten onions at the time of inspection. Ensure food items are inspected at the time of delivery. Rotten items should not be kept within the facility. Refer to Subway food safety plan for proper receiving procedures.

Observation: Staff did not have a valid food safe level 1 certification or equivalent. They were not aware of what Food Safe certification is.

Comments

Routine inspection conducted.

Temperatures:
Coolers were maintaining 4 degrees Celsius or less.
Freezers were maintaining less than -18 degrees Celsius.
The hot holding unit at the front for soup and meat balls was maintaining at least 60 degrees Celsius.

Sanitation:
All hand sinks were stocked with hot and cold running water, liquid soap, and paper towels.
Staff hygiene and food handling practices appeared satisfactory.
General sanitation is satisfactory.
QUATS sanitizer dispenser measured to have 200 ppm QUATS. Ensure spray bottles are re-filled first thing in the morning and test strips are used to confirm concentration.

General:
Chemicals were stored in a safe manner away from food items.
Washrooms were in satisfactory sanitary condition.
All lights were functional.

Pest Control:
Facility is monitored by a professional pest control company.
Tin cat under the 3-compartment sink was empty. Staff did not have access to the pest control reports and manager was not on site.
