308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1) Exterior glass door panel on right side of the display cake freezer door was not in an intact condition. Glass panel was taped to hold it together. Supervisor mentioned that this was a result of someone trying to break into it. Note: Interior panel was in an intact condition and freezer temperature was adequate (at or below -18 degrees C).
2) Lids of storage bins for some of the dry toppings were not present.
Corrective Action(s): 1) Either replace the broken glass door panel with an intact panel or replace the entire freezer unit. Operator and Supervisor confirmed that they are planning to replace this display freezer with a new freezer unit. Ensure the new freezer can be maintained at or below -18 degrees C, is of commercial grade, is equipped with a thermometer, and is of similar size/capacity as the current display freezer for the cakes; correct within 2 months. The freezer unit was locked at the time of inspection and Operator confirmed only staff pull out the prepackaged cakes from inside the freezer.
2) In the interim, ensure the dry toppings are covered between use with food grade materials (e.g. saran wrap). Repair or replace the storage bins so that they are equipped with lids to fully cover the toppings between use; correct within 1 month.

Handsinks were supplied with liquid soap, hot and cold running water, and paper towels.
Handsinks were accessible for handwashing with adequate clearance space around them.
Ware-washing sink units were supplied with hot and cold running water.
200 ppm QUATS sanitizer was available in the sanitizer pails with wiping cloths and from the dispenser at the ware-washing sink.
Walk-in-coolers and other coolers were at or below 4 degrees C.
Walk-in-freezer and other freezer units were at or below -18 degrees C.
Hot potentially hazardous food was stored at or above 60 degrees C.
Ice machine appeared to be in a satisfactory condition.
Maximum occupancy limit was posted at the front entrance door.
Markings on the floor near the front service area were present to facilitate physical distancing between customers.
Staff were wearing masks.
COVID-19 safety plan was available on-site.
