A routine inspection was completed:
- Walk-in-cooler was below 4C; walk-in-freezer was -23C; various upright coolers were below 4C; and thermometers present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- 3-comp sink present for manual warewashing. Dish soap and bleach present.
- Bleach sanitizer in spray bottle had [Cl2] of 200ppm.
- Foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins separate from RTE foods; and foods stored 6" off the floor on shelves and pallets.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is satisfactory. No signs of pests.
- Owner has chosen to change the foods being produced. Owner has stopped making and selling prepackaged meals and dumplings.
- Owner states he will only be making kimchi and cold radish salad for retail sale, this is approved. No food items require cooking at this time.
- Foods will be delivered to retail sites using a contracted delivery company.
- Owner stated that he has applied for a building permit to install an exhaust system over the gas burners and oven. However, the owner is taking time to think about this, and is unsure what his future plans are regarding the foods he will be producing and if it is cost effective.
- There were no prepackaged meals or dumplings on-site.
- Staffing levels have dropped due to food items changes (3 staff on-site plus the owner).

ACTION
- Submit FoodSafety Plans for the kimchi and cold radish salad.
- Submit an updated floor plan drawing showing any additional equipment brought in to make kimchi and radish salad, and to reflect the remove of prep tables or equipment.
- Repaint the floor so it is sealed and cleanable.
- Obtain approval from our office PRIOR to adding new food items.
