302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): A bucket of 200ppm chlorine solution was available by the dishwashing area. However, a spray bottle labelled as 'sanitizer' had 0ppm chlorine measured. When asked, staff could not remember when the solution was prepared/lastly used. Staff was advised to refill the bottle with 200ppm chlorine solution and have all food prep surfaces sanitized at this time.
Corrective Action(s): Ensure to have 200ppm chlorine solution available at all times. Use the solution to have all food prep surfaces sanitized before initiating any food prep in the morning, after each possible contamination and every 2 hours during operation.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Handwashing station in the kitchen blocked with a cutting board. Staff had advised the sink had not been in use due to a leakage issue. Staff to use the nearby food prep sink to wash hands for now.
Corrective Action(s): Ensure to have all handwashing stations adequately supplied with liquid soap, paper towels and hot/cold running water at all times. Ensure all handwashing stations are free of obstruction at all times as discussed at this time.

Observation: 1) Scoop for flour bins stored in a dirty bowl.
2) Rice scoop stored in stagnant water.
3) Opened can foods (three) observed in a prep cooler.
Corrective Action(s): Ensure to have scoops stored in a clean/sanitized container. Store rice scoop in ice water or a clean/sanitized container. Ensure to have all can foods transferred to food grade containers once opened.

304 - Premises not free of pests [s. 26(a)]
Observation: Rodent droppings observed from the following areas:
- electrical/storage room
- back storage corner behind chest freezer/cooler
Corrective Action(s): Ensure to have all droppings removed and have affected areas sanitized using 1000ppm chlorine (1:50). Monitor for droppings EVERY MORNING and remove them if observed. Send a copy of the most recent pest control report available to the health inspector.

Observation: Heavy accumulation of oil/grease build-up observed on floor underneath and sides of the cooking equipment.
Corrective Action(s): Ensure floors are cleaned on a regular basis as per facility's sanitation plan. Ensure to have all food sources for pests (i.e. oil, food debris, water) removed at the end of each shift/day.

Observation: The following areas require cleaning:
- all storage shelves/carts
- floors throughout
- front/sides of kitchen equipment (i.e. coolers/freezers/stoves etc.)
- inside of coolers/freezers/walk-in cooler
- back electrical/storage room
Corrective Action(s): Ensure all above areas are cleaned as discussed at this time.

Observation: The following equipment required repair/replacement:
- Dishwasher (leaking issue/broken temperature gauge)
- Handwashing sink in kitchen (leaking issue/cold water knob)
Corrective Action(s): Ensure all equipment are properly maintained and in good working order at all times.

Observation: Single use 4L dairy containers and take-out containers being used to store food throughout the facility.
Corrective Action(s): Ensure all foods are stored in food grade containers. Single use containers are meant to be used one time only.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: Handwashing station in kitchen was blocked and not being used by kitchen staff. Another sink available by the back cooler not being used as per staff. Both sinks were equipped for handwashing.
Corrective Action(s): Do not alter or change facility's approved plan without obtaining a Health Approval.

Comments

Routine inspection conducted:

- Handwash station at front adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating at/below 4'C; freezers operating at/below 18'C.
- Hot-holding unit operating above 60'C.
- Food stored in pest proof containers and at least 15cm off the floor.
- Professional pest control company contracted for a monthly visit. Report to be sent to the health inspector as mentioned above.
- Kitchen staff Foodsafe certified (exp. 2026).

NOTE: Ensure all cut vegetables are stored at/below 4'C (on ice or in cooler) at all times. DO NOT leave cut vegetables out at room temperature during busy hours and place them back in cooler for later use. Cut vegetables should not be left at room temperature for more than 2 hours as discussed at this time.

General maintenance and sanitation require a major improvement. Correction Order issued at this time. All violations must come in compliance by the follow-up inspection. As per progressive enforcement, failure to comply will result in further enforcement action (i.e. issuance of ticket(s) - 1) violation, and 2) for not complying with a Health Order, and/or a Closure Order).

Health inspector spoke to the owner on phone at the end of the inspection. Inspection report and a copy of the Correction Order to be emailed directly to the owner as requested.
