Observation (CORRECTED DURING INSPECTION): Chicken wings waiting to get portioned were again found left out while the employee responsible for them left for a delivery. Wings found at 16C (room temp 27C)
In addition, wings were getting portioned in an area of the store where there is not adequate lighting to be dealing with food
Corrective Action(s): As previously discussed, hazardous foods must be kept cold! If staff must perform a different task, move the wings to your cooler.
No not use your back storage space for anything other than chemical and dry goods storage.

Walk in cooler 3C
Prep cooler ranged from 2C (bottom) to 6C (top with lids open).
***Keep lids closed while not in use. This must become habit, especially while the store remains hot through summer months
Pop cooler with no hazardous foods at 0C
Quat sanitizer in spray bottle was refreshed at time of inspection
Quat dispenser at 3 compartment sink found at 200ppm
Temperature logs are getting well maintained. Please also include daily checks of your quat sanitizer dispenser.
General sanitation good. No evidence of pests
