Observation (CORRECTED DURING INSPECTION): A single use cup was observed stored inside the sugar bin.
Corrective Action(s): Single use cup removed at time of inspection. Ensure that all scoops have purpose-built handles that can be kept outside of the food product, or scoops are kept outside of containers, to protect food from potential contamination. Do not use single use items as scoops as they are not designed for re-use and are not designed to be cleaned and sanitized. A re-usable plastic scoop with handle was available for use at time of inspection.

304 - Premises not free of pests [s. 26(a)]
Observation: What appeared to be mouse and rat droppings were observed in room labeled "employees only." Rat droppings observed under two-compartment sink only. No food/utensils/equipment stored in this area. Few mouse droppings observed on shelving in the aforementioned room. No food/food equipment stored in this room; only one sealed bag of diposable cups observed (removed from area at time of inspection). Room is used mainly for storage of cleaning chemicals and tools.
Corrective Action(s): Ensure that all droppings are removed and all affected areas are properly cleaned and sanitized. Ensure that any holes or other entry points, particularly under two-compartment sink, are properly sealed to prevent pest entry. Ensure that there is no standing water or leaking water as this may attract pest activity (not observed at time of inspection). If evidence of pest activity persists, have a professional pest control operator service the facility. Date to be corrected by: September 7, 2018.

315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
Observation: 1. No thermometer observed within ice cream freezer.
2. Fluid has separated within thermometer located in reach-in freezer.
Corrective Action(s): Ensure all cold holding units are equipped with thermometers accurate to 1 degree C to verify unit temperatures. Date to be corrected by: September 7, 2018.

Routine inspection conducted:

- Reach-in beverage cooler at 3 degrees C
- Reach-in food cooler at 1 degree C
- Reach-in freezer at -18 degrees C
- Ice cream freezer at -19 degrees C
- Food is stored off the ground and is stored separately from chemicals and other non-compatible items
- Pre-packaged food and slushies only. No evidence of pest activity in food storage areas.
- A sample of food items were audited and observed to be within the best before dates. Note: Reminder to rotate stock--"first in first out." No severely dented cans observed. Sample of items with printed expiry dates were audited and observed to be within expiry.
- Two-compartment sink supplied with hot and cold running water and two sink plugs. Dish detergent and bleach available for equipment washing and sanitizing.
- Hot and cold running water, liquid hand soap, and single use paper towels available for hand washing
- Discussed cleaning and sanitizing of slush equipment--satisfactory.
- A bleach water sanitizing solution is available in a spray bottle.
Note: 1. Bleach water sanitizer slightly exceeded 200 ppm--bleach water sanitizer diluted at time of inspection and re-tested at 100 to 200 ppm. 2. Spray bottle nozzle not functional and spray bottle was not labeled. Bleach water sanitizer transferred to a container at time of inspection. Ensure wiping cloths are stored in bleach water sanitizer between uses, or a clean wiping cloth is used each time. If solution is to be stored in a functional spray bottle, ensure the spray bottle is labeled appropriately.
