Met with Paul Hewitt, Kitchen Manager, and we discussed the following: - new sanitizer in use ( recommended level 272 to 700 ppm ) of " sink and Surface" cleaner sanitizer provided by ECOLAB. Test strips are available - Daily temp logs are available on site/ daily and weekly cleaning schedules - Low temp dishwasher - supplied with chlorine at 100ppm at the final rinse. Suggestion: - in the future provide the pest control contract that will provide maintenance around the building/ storage and garbage area.
